pete & i were in desperate need to go grocery shopping after weeks of eating out (& junk at that!) we finally made it to the pathmark.
as you can see we were down to the bare minimum! (i had just put the chicken & eggs in when i deciced to take the picture) kinda sad if you ask me, especially for someone that loves to cook!
then after a fun filled hour at the store we had a plentiful fridge. we made a pack that for the rest of the week we would only eat what we bought today & what we would make. after spending a silly amount of money on eating out in july, our wallets need this much needed break. (not to mention our bodies!) so tonight we hopped right to it & made "grilled chicken ranch pitas" yum! pete is really good at coming up with quick an easy meals & together pitas we made. it was alot of fun to share our tiny little kitchen and enjoy our well executed meal.
Here is the run down of the "recipe"
Grilled Chicken Ranch Pitas
2 chicken breast, grilled & cut into strips
1 cup of chopped lettuce
half of a small onion, finely chopped
half of a cucumber, chopped
1/2 cup of grape tomatoes, quatered
1/2 cup of shredded mozzarella cheese (or any shredded cheese you like)
1/2 teaspoon salt
1/2 teaspoon pepper (we like our food peppery)
2 tablespoons of lite ranch dressing
2 warmed pitas, spilt in half
Combine all ingredients in a bowl, mix well. Fill pitas & enjoy!
the nice thing about this meal is that its super easy, filling, & not all that bad for you! pitas are also a great meal starter, pete & i kept coming up with ideas of what to fill the rest of our pitas with. hope y'all enjoy it just as much as we did!
